Baked Fish in Clam Sauce

Fish has always been a favourite of mine. Not only are there many wonderful varieties and tasty recipes, but fish also has unique health benefits found in no other dishes. I can never go wrong with fish – there are so many quick and easy recipes to choose from. It can be prepared as a meal for any time of the day and for any season of the year. For a quick and easy meal, fish is a perfect choice.

Baked fish in clam sauce is simple to prepare but delicate and tasty. Before serving, the bigger-sized fish should be baked for only a few minutes and then topped with warm sauce. The clam sauce adds wonderful texture and flavour to this recipe, making the dish just that extra special.

 Ingredients

Baked fish

 

Lapu-Lapu or Barramundi or

     King Fish (whole)                         2 Kg.

Onion (chopped)                                 1 Large

Tomatoes (chopped)                           1 Large

Water                                                  1½ Cups

Cheese (grated)                                  ½ Cup

Canola oil or Olive oil                                   ½ Cup

White wine                                         6 Tbsp.

Salt                                                      1 Tbsp

Ground black pepper                          1 Tsp.

 Clam Sauce

 

Garlic                                                 1 Tsp., minced

Olive oil or margarine                                    ¼ Cup

Tomato paste                                      2 Tbsp.

Sugar to taste                                      1 Tbsp.

Fish sauce

Minced parsley                                   ¼ Cup

Cooked clams                                     1 Cup

Flour                                                   2 Tbsp

 Method

 

1. Clean the whole fish properly and drain to dry.

2. Mix all the ingredients for the baked fish.

3. Place fish in a baking dish and add the mixture to the fish.

4. Bake at 350F for 45 minutes or until the flesh of the fish starts to flake.

 Clam Sauce

 

1. Saute the garlic in olive oil.

2. Add flour and tomato paste and stir.

3. Adde cooked clams followed by minced parsley.

4. Adjust taste with sugar and fish sauce.
